Yoshimitsu is a small blacksmith shop that is owned and run by a family of 5 brothers and was founded in 1868 and originally produced various steel tools for the people of Nagasaki. They originally made all of their items from Tamahagane steel which is an extremely labor intensive process of producing steel from iron rich sand and mixing it with charcoal in what is called a Tatara. They still make this steel in the traditional way mostly for the collector sword market but Yoshimitsu sometimes gets a few pounds for use in their kitchen knife production each year. This knife is one of those few.
The gyuto is made with san mai construction and is done by hand. This knife is discounted because there are some very minor scratches and imperfections on the blade which is typical of hand made knives. For instance, you can see the dent in the back of the blade where the engraving mark is hammered and there are a couple of tiny steel pits in the cladding. Also the blade is covered with a thin, food safe lacquer that you can leave on or remove. Itís there to prevent rusting while on the shelf. Itís easy enough to remove with some nail polish remover. This is a unique and beautiful knife and a usable piece of Japan's history that you can hold in your hand.
