Yahiko R-2 Stainless Gyuto 210mm

The Yahiko R-2 Stainless Gyuto is a new addition to our expanding line of exclusive to CKTG kitchen knives. The blade is constructed from R-2 powdered stainless steel to which a layer of softer stainless steel is added using the san-mai technique. The blade is stamped from the resulting metal blank. The core steel is hardened to 64 HRC.

R-2 is a wonderful alloy for kitchen knives. It has a very hard feel but is able to hold an edge over the long haul. It also has a high wear resistance as compared to other knife steels. However it is quite easy to sharpen. The grind is fairly thin at the spine and thus does not taper much towards the tip. It should prove to be a tough knife and able to handle the rigors of professional and home life.

The knife is slightly longer than advertised coming in at 215mm. So itís a nice medium length for most users and spaces. The black micarta handle is attached to the blade with 3 stainless rivets and a stainless bolster. Itís a great look for a real workhorse knife.

We anticipate this to be a top seller given its fine fit and finish and superior construction. Coupled to price that has to be seen as a bit of a bargain.

    This particular knife was not sharp out of the box, but after 10 minutes on my spyderco ceramic stones and strop it was razor sharp. Fit and finish is excellent. The shape of the handle would be better if it had more belly in the palm swell. It did a great job quartering raw sweet potatoes. It does a better job at slicing bread than my old bread knife. Making salsa was effortless. This is my first paper micarta handle.

    Ive had this knife for a month now and it performs great. I bought this as a thin knife because I wanted a very knife to glide through food and I was curious about the edge retention of R2. The blade is super thin, It goes through food with little effort and I have experienced zero wedging . The edge stays sharp through days of service and with a couple of passes on a steel, it goes back to being able to shave hair. My only complaints was that the knife needed sanding, it was sharp on the neck and coil but that took 5 minutes with sand paper, but left tiny scratches on the blade. For the price, this knife is a great deal, its performance is amazing.

    Let me begin by saying my preference is for a 240mm Gyuto (hint, hint), however after exploring the different steels and finding this Gyuto at this price point, I felt that I had to jump in with both feet. When it arrived, I was immediately impressed with the fit and finish - truly a craftsman's skill is demonstrated here!! The OOTB cutting edge also demonstrated the same level of skill and caring (8 out of 10, perhaps 9). After a long day in the trenches, the edge was as sharp at the end as it was at the beginning, however, I stropped the blade anyways as that is how I treat all my knives after use. At this price, with this steel (r2), I feel that it is far and away the best bang for the buck on the entire website, perhaps in the entire market. Well done Mark!!

    I bought this knife as a gift for a friend who is graduating with their Ph.D. It did come rather sharp, but since it was a gift I had to give it the full treatment and sharpened it fully on an edge pro at 18 degrees (not as acute as I know it can take, but I can't be sure how well the friend will treat it... X_x). Holy holy this thing. I cut an onion side by side with a Konosuke HD2 240mm and a same-time sharpened Richmond SKD-11 240mm gyuto. The Yahiko shone, even beating the Kono in my limited one-onion-each test. That was largely due to the Kono being ~8 home dinners past being sharpened, but it still goes to show how great of a knife this is and a laser like performer, effortlessly cutting through the onion. I wanted to keep cutting a bunch of stuff but I wanted to keep scratches/etc. to a minimum being a gift and all. The CKTG video speaks accurately about the spine and choil, they were rather harsh OOTB, I hit them with some sandpaper and it's now the perfect gift.

    Really excellent for the price. The blade is pretty thin, slices with ease. Razor sharp out of the box. No sharp edges on the handle or bolster, but fit an finish around that area isn't perfect. Still, no sanding or buffing required to make the knife comfortable in the hand. I highly recommend this knife! You are unlikely to find something similar (especially in terms of the steel) for the price.

    Sharp. Oh so sharp. Smooth. Oh so smooth. I'd say this is a knife for both a home user and pro! Used it for the first time tonight. Pure magic!

    It's amazing the kind of inspiration a new, and uber-sharp, knife can provide to a cook.

    Get this while you can. Seriously, stop reading and order it!

    Just received this knife. Very sharp OOB. Was considering the Takamura but this one was $30 less and uses the same R-2 steel so I couldn't resist!
