Yahiko R-2 Stainless Gyuto 210mm

The Yahiko R-2 Stainless Gyuto is a new addition to our expanding line of exclusive to CKTG kitchen knives. The blade is constructed from R-2 powdered stainless steel to which a layer of softer stainless steel is added using the san-mai technique. The blade is stamped from the resulting metal blank. The core steel is hardened to 64 HRC.

R-2 is a wonderful alloy for kitchen knives. It has a very hard feel but is able to hold an edge over the long haul. It also has a high wear resistance as compared to other knife steels. However it is quite easy to sharpen. The grind is fairly thin at the spine and thus does not taper much towards the tip. It should prove to be a tough knife and able to handle the rigors of professional and home life.

The knife is slightly longer than advertised coming in at 215mm. So itís a nice medium length for most users and spaces. The black micarta handle is attached to the blade with 3 stainless rivets and a stainless bolster. Itís a great look for a real workhorse knife.

We anticipate this to be a top seller given its fine fit and finish and superior construction. Coupled to price that has to be seen as a bit of a bargain.

    Sharp. Oh so sharp. Smooth. Oh so smooth. I'd say this is a knife for both a home user and pro! Used it for the first time tonight. Pure magic!

    It's amazing the kind of inspiration a new, and uber-sharp, knife can provide to a cook.

    Get this while you can. Seriously, stop reading and order it!

    Just received this knife. Very sharp OOB. Was considering the Takamura but this one was $30 less and uses the same R-2 steel so I couldn't resist!
