St. Francisville,La.I purchased the Victorinox 7" Granton Edge Santoku knife primarily for chopping raw vegetables. The 1st time I used it,I cut a large onion in half and all I could say was "wow!" I eat a lot of raw vegetables,such as cabbage,cauliflower,red unions,broccoli,carrots,etc.,and have never before had had a knife that perform so beautifully. The edge is razor sharp and holds up very well over time and is easily resharpened to its original state with ceramic sticks when needed,and that is not often. The high carbon content of the blade undoubtedly is responsible for the long lasting edge and makes it an extremely effective tool for chopping vegetables. I also appreciate the ability of the user to "rock" the blade up and down while using. the handle is non-slip and fits my hand,which is medium to large,very well. Overall an excellent product for the price!
