This is a great knife you cant go wrong with Wusthof. I highly recomend staying with the Wusthof classic line of knifes;I have had a lot of fellow chefs that have run other lines of Wusthofs and I think they are an inferior product. Stick with the Classic its a great investment.
This is a standard workhorse in the kitchen. Strong and durable,it’s adept at many tasks. However,it’s indicative of a forged German blade in that it is quite heavy with a bolster and more conservative bevel. The bolster has a swept shape that is somewhat comfortable for a pinch grip,but does not allow you grip as far up as you would like. I think this comes down to personal preference,though. However,because of the bolster,this knife is longer in hand that a bolsterless knife will be and can be unwieldy at times. Also,for a 10”,it is not terribly wide and you have to be careful with your grip. While the heavier bevel does make is less geared towards quick and very clean fine work,it makes up for it brute strength and durability. For that,this knife will always have a place in my roll.
