- verified customerI personally feel over the years, Santokus have received alot of bad rap for being useless, or being a 'jack-of-all-trades' knife without excelling at anything due to its snubbed-down tip.
But seeing how I needed a new paring knife, stumbling across this set was a neat little find. Having used a Tojiro DP 90mm parer before (which, got stolen at work), I am accustomed to how sheep's foot-ed knives behave and work.
Really, if you can devise ways to get around its one and only weakness- the lack of point- then the Ikon Santoku really is a fantastic workhorse knife to have; especially when you work on the line, or in tight spaces.
If you worry about the need for precision filleting, the parer actually does great work as a boning knife...otherwise, have a sujihiki on standby just like me.
I made the jump to buy a Wusthof (Japanese knives are always best imo) and this time, I had no regrets with this purchase.
