Aomori Hiba is considered better wood for cutting boards than Hinoki since the trees used are more mature, with tighter grain and better stability and durability. This one is the large size measuring Wasabi 19" x 9.25" x 1.2".

Aomori Hiba has been used to build temples, shrines, castles and other important works of Japanese architecture throughout many generations. Japanese chefs have long utilized this mold- and bacteria-resistant wood for their cutting boards. Our cutting boards are made in the tradition of skilled Japanese craftsmen, with attention to detail and consideration for the best way to make the most of this natural resource.

Aomori Hiba must survive in harsh natural environments. It can take up to 300 years to be 70cm in diameter, compared to typical Japanese cedar which takes 100 years to reach the same size. This slow growth rate creates a very fine grain, which is why it is called "Golden Wood." The hiba forest in the domain of Tsugaru (Aomori pref.) has been protected and managed carefully since 1661 because it is considered to be such an important source of the wood.

4  Smaller than expected, but a superb product, August 25, 2016

Pull a ruler or tape measure out before you buy this. When I received it, I was very disappointed in how small it was. I buy things for work in a kitchen from this site, and was shocked to get a cutting board that was about 1/3 the size I\'m used to. I guess the \"large\" size of this board is relative. However, that\'s the only reason I went down a star on this board. The quality and craftmanship are superb. Cutting on this thing is a dream, and I do find myself grabbing it at work most of the time, unless I\'m doing some kind of animal processing or cabbage shredding, or something that actually requires a lot of real estate. Everything else fits, and I just have to keep myself and my board a bit more organized. This board feels great on my knives, smells wonderful (but doesn\'t transfer anything to the food,) is absolutely beautiful, and should last a long, long time. And hey, since I\'m moving soon, and since this thing fits in my backpack with my knife roll, maybe I\'ll take it on some stages with me!
