Wa-Gyutos Wa-Gyutos are specialized knives that have become popular in recent years by knife enthusiasts. A gyuto is basically a western chef knife made by a Japanese maker with a few modifications. The knives tend to be thinner, sometimes forged but often stamped without the traditional western bolster that many find cumbersome and interrupts sharpening the blade at the heel. The "wa" refers to a traditional Japanese handle which is often octagonal but sometimes is D shaped or even oval.
