Utility Knives A utility knife is an all-purpose knife that is typically larger than a paring knife but smaller than a slicing knife. Some utility knives have a serration on the blade. Usually the knives measure between 5" and 6" on the blade. The utility knife can be used to carve, slice, bone and fillet but is typically used for cutting small fruits and vegetables.
