- verified customerFor the price you pay, what you're essentially getting is a good, firm VG-10 steel that isn't flimsy, and does a great job at fruit and small veg prep. Making small macedoines from a peckham pear, for example, is p*ss easy.
Although the blade might not be as strong as Aogami steel for example, it's pretty much the kind of knife you can also use on the line, and it'll take a fair bit of abuse.
Edge retention is good, and went insane with the sharpness after putting it through a good old-fashioned Japanese newspaper strop.
