The Tojiro DP line of knives is famous in the market for delivering top-flight performance at an accessible price making it an ideal introduction to the world of Japanese kitchen knives. Tojiro DP knives sport a hard VG-10 stainless core which is expertly treated to achieve a wonderful balance of extreme sharpness potential, ease of maintenance, and edge retention. The VG-10 is laminated with softer stainless steel, which improves the sharpening experience and adds integrity to the knives’ construction. This knife features a nicely tapered spine and great convex grind, which heighten the blade's dexterity and improves food release respectively. Fit and finish is very high with a nicely transitioned bolster, flush surfaces and a bulletproof stamina wood handle. Overall, these knives are arguably some of the best values available.

This 120mm petty from Tojiro is perfect for smaller slicing tasks and larger peeling work. This format is also popular for use as a smaller utility knife which can be applied to number of everyday activities that don’t require the chopping power of a gyuto, but for which a paring knife would be insufficient. Depending upon the sort of work regularly performed, either this knife or a 150mm petty will be a staple in most professional and home cooks’ arsenals.

The factory edge is pretty good. Used a ceramic honing rod to dress the edge and it cuts well. I like the blade but I have two issues with the handle. First, I find the handle to be a bit too slender to grip comfortably. Second, there are burrs on the bottom edge of the bolster where it transitions to the heel of the blade and the top edge of the bolster feels a bit sharp where it transitions to the spine of the blade, so using a pinch grip at the bolster is also uncomfortable. I can fix the finish on the bolster but I'd really prefer a heftier handle.

      Perfect paring

Exactly what a paring knife should be. Fits very well in the hand and works great cutting toward or away from the hand. Can't be beat for the price.

We absolutely love these knives. We are using them as replacement steak knives so we can keep them sharp for guests. Wicked sharp out of the box and a quick strop before service keeps them perfect.

I recently read an article in a food magazine that talked about the history of knives going back to the Samurai sword which led me to read more about cooking knives and this website. It was a fun adventure and my two recent purchases have made meal prep a lot easier. Thanks!

Not very sharp out of the box. I really like the size for home use. In the kitchen at work I find it useful as a larger pairing knifebut I mostly keep it home where it's size is more versatile. Seems like good steel but only time will tell.

      Torijo DP Petty 120 mm

Good design, well made and finished, this knife was truly sharp on arrival. It passed the cherry tomato test (is a cherry tomato half-sliced through when dropped on the blade from 6 inches above it?). It's a better quality and it arrived sooner than I expected.

I use it as a paring knife, my wife uses it as a all around utility knife. She uses the 150mm DP Petty as her main kitchen knife. Would buy again, very useful knife and well made. Sharp enough out of the box but the blade will take a finer edge.Does not fit in the CKTG 5 slim blade guard, the blade is to tall. FYI.

Excellent knife but handle should be inch longer. I'd try something else if you've got larger hands. Sharp as hell!

      Insane Value
Posted By: Jeff - verified customer

My new go-to knife for poultry and trimming roasts - amazing companion knife for a gyuto/santoku! OOTB edge is surprisingly good, tapering into a convex grind. Decent flat spot for push cutting smaller veg and alliums2000 grit sandpaper on rivets/spine/choil - solves all F&F issues within 5 minutes. The only con I can say is the san mai cladding is really soft and will lose the polished sheen almost immediately. This is purely cosmeticMake no mistake, this is clearly a factory made knife - no one hand polished the handle to smooth out all the rivets, but the price to performance ratio is off the charts

This is the knife for smaller jobs.My wife loves it. Perfect for cutting herbs, and boning smaller proteins. Additionally, Petty knives are an indispensable tool for those who feel uncomfortable wielding a larger chef knife, like my wife, over all 5 stars I like that knife too.

This is just my favorite thing in the world right now. Probably the most versatile, sharp, and easy-to-use blade I've held in my hand. The edge retention is very impressive as well as being user friendly. Great knife and this website gives the absolute best price!

This is my second Tojiro dp knife. The fit and finish is flawless on the knife I recieved. The handles are pretty square on my Tojiro's so a little work with some sandpaper can shape them to your liking if it bothers you. I haven't touched mine. The knife was fairly sharp however I did a little thinning and polished up the edge and this really is now my new favorite knife. It definately will support and hold a keen edge. 5 stars for a great knife at a awesome price.

I've only had it a week or so. The blade is razor sharp - I suspect one could shave with it. Very pleased with it.

Like all my Tojiros, very sharp out of the box and f&f are fine. Peels anything and my wife uses it whenever she needs a knife of any size--go figure? I wash & dry it and all my other knives when I finish using them.Truly a bargain.

Takes a wicked edge and cuts great. No rust issues at all and it will be used for cutting veggies and left wet.Relatively thin so a bit of flex in the blade.Handle needs a bit of tweaking to be comfortable (sanding with a bit of wet/dry).A great knife for the price.
