TC Blades Chefknivestogo is proud to be the only US company to sell these special knives. TC Blades is owned by Tslil and Inesse Censor. The knives are fabricated in the the southern Negev region of Israel of the finest materials.
Tslil started making knives after 15 years of ceramic design and silversmithing. Inesse spent the same amount of time as a textile designer. They wanted to work together and create objects that are as beautiful as they are functional. Tslil and Inesse share a love for Japanese culture, art and design and decided that making beautiful knives was a great way to honor that common interest. Tslil makes the blades and Inesse makes the handles. They work long hours and do not employ any workers or outsource any part of the process. They are dedicated to making quality knives and take great pride in their work.
These blades are single side ground with a flat back and about 70/30 ration. Tclil likes to leave a bit of material so as to allow the new owner to "train" the blade just the way he or she likes it.
Regarding the HRC - it's not an exact science with these knives - generally speaking they yield between 58-62 HRC - I would guess these knives are on the 62 HRC side of things - the steel was a serious effort to polish and sharpen on these blades. This is o1 carbon tool steel.
