The Takeda Stainless Clad Sasanoha Small is an excellent new addition to Takeda Hamono's knives. They are now making stainless clad knives with aogami super steel core edge for added protection and easy maintenance. Takeda Hamono is a small Blacksmith shop, founded in 1920. Shosui Takeda's father moved the business to Niimi in 1951 and produced hand-forged blades and tools such as kitchen knives, hoes, hatchets, etc. Master blacksmith Shosui Takeda has succeeded in forging blades from the high quality carbon steel, Aogami Super Steel (AS) and they are an iconic blade that has sold all over the world to knife enthusiasts and professionals that seek a high performance cutting tool. The blades consist of "AS", forged in its entirety by hand, as it has been done for generations. Each blade holds its edge extraordinarily well and resharpens easily. All his knives have 50/50 edges and octagonal handles so they are good for either right handed or left handed users.

One of the things you'll notice about this knife is that it is light and nimble feeling in the hand. It's thin and goes through product easily, and the kurouchi finish seems to help avoid product sticking to it. It has an unusual grind I had not come across but once I understood how it was different, sharpening was pretty straight forward. Takeda has a following and once you've tried one of these you'll understand why. Great knife!
CKTG is at heart a small business so the service is personal. They are one of the rare companies that actually dispatch the order the same day as receiving it and provide tracking information. It is great to deal with an individual by name and itís evident that they take pride and love in what they do.
