Tamahagane Knives are made from 3-Ply Stainless Steel. The wooden handles are very distinctive. Translates as "Jewel Steel." Tamahagane San is a clad knife, made from a core of VG5 steel and two outer layers of SUS410 steel. The core of VG5 steel has a Rockwell Hardness of 58-59. This hard core is then cushioned by the outside layers of SUS410 steel, which have a Rockwell hardness of 28-32.
An exceptionally sharp factory edge is the pride of Tamahagane San. Cooks will love how easily Tamahagane San knives sharpen because of the very thin VG5 core and much softer SUS410 steel. The optimal sharpening angle is 14-15 degrees.
The eye catching handle is distinctive yet classic. Made from strongly compressed laminated wood, the handle gives you the tradition and warmth of wood without an exposed metal tang that can sometimes cause discomfort.
Very sharp knife. Cuts through onions and tomotoes with ease. Very light weight and comfortable to grip. Not ideal for mincing or cutting hard items though. A wider,heavier knife would be preferred for that.

This knife is thinner than the Shun Classic 8" Chef’s Knife,which gives it a much better shot at being sharper from the factory and off the stones. It blade feels much more like a Japanese blade since it’s very light and toss-able all around vs. the Shun and not as handle heavy. Personally I like the shape of the Shun handle more,this is a more of a narrow oval. Also,I far prefer this geometry to the French chef’s knife geometry due to the lower tip which lends itself to a longer cutting section. Seeing the steel circle of the tang at the butt of the handle is a cool touch. Personally,I’d get the 10" knife,but this one was for a gift.
Compared to my Tanaka blue steel gyuto,this isn’t quite as sharp due to the wider grind angle,although the difference is tough to tell in practice. I would say this is a top entry for price/performance/durability/maintenance as a first knife into th foray of Japanese cutlery.

this is a great knife. i had really been wanting the shun bob kramer knives after trying them,and this is on par if not better. great buy id recommend to anyone who loves to cook.
