We are proud to be the only US retailer to carry his gyutos, nakiris and santokus. His specialty is forging knives using Blue #2 steel and these are honyaki blades meaning they are not clad with stainless steel, which is a rarity these days.

    I bought this knife used from freddy who originally rated it. I just increased deepened the secondary bevel on my shapton stones and this knife is amazingly sharp and swift through product. There's no distal taper but for me that screams tougher and more sturdy for a professional kitchen. It's the only knife I have that keeps its thickness through the spine and since I thinned the bevel it doesn't hurt my cutting performance

    Just bought this knife. i guess i couldnt tell by the picture, but i thought this going to be a very thin knife when i bought it, as it says it is 2mm at the spine, which is thin for the base. But unlike most knives ive come across where the spine of the blade gets thinner at the tip, this knife does not. It is the same width from base to tip, which im not really a fan of.
    That being said, this is a great piece of steel. It has a nice weight to it and it feels great in hand. The forged carbon steel gives it a more of a "real" feeling that i cant explain, compared to using stainless steel knives, and the wood handle is beautiful. It does not come sharp out of box at all, but after sharpening it cuts like butter and does not lose an edge.
