The 150mm petty is what most people consider to be an ideal length for a utility blade, and the mini gyuto shape and good blade height make the Tanaka Sekiso 150mm petty an outstanding choice for all around use in the kitchen. It pairs well with a gyuto, and works fantastically well on the board for fine work, and fast mincing of garlic and shallots. The blade is so thin and light, it becomes an extension of your hand, and its ability to take and hold a razor sharp edge make it a food prep scalpel.

Like the other knives in the Sekiso line, this one has an Aogami #2 high carbon steel core, and ductile iron cladding, and is therefore reactive. The lightweight blade is accented with a similarly lightweight handle, made from ho wood with a buffalo horn ferrule lending to the knife that classic light/dark contrasting wa handle look.

    First off,this is a great buy. As a mid size petty,this thing is a lazer. So light,you can barely feel it in your hand. Unbeatable agility. I also have a Shun 6.5" utility which would fill a similar role,ootb sharpness is right on par with the Shun,even just a tick better,but where this knife excels is in agility. Making garnishes,peeling potatoes,or for sushi cooks paring cucumber fans,or rolls this thing is a godsend. Super thin grind,with a tick of distal taper out to where the grind meets the spine,and drops of to what seems like just a couple atoms thick. Paper thin tomato slices,are not a problem,it laughs at bread,even soft bolillo rolls. You won’t be taking apart chickens with this,not sure I’d want to risk a blade on bone encounter,but for paring,and peeling citrus to potato,and cutting supremes,I doubt you are going to get too much better than this for this price. It’s carbon,but come on,you are wiping your knife at a minimum between each piece of food,aren’t you?
