Featuring the most advanced in cutlery steels, stunning aesthetics, and a flexible profile, the Sukenari ZDP-189 240mm gyuto is an outstanding choice for demanding consumers of Japanese cutlery. The ZDP-189 core steel is an advanced powdered metallurgy steel capable of holding an edge for an extremely long time. This makes the knife a great choice for culinary professionals who work extended prep sessions and need a knife that can keep up. It is also a great option for home enthusiasts who value time at the cutting board more than time on the waterstones. The ZDP-189 core is wrapped in an attractive, mirror polished, Damascus patterned cladding layer. Both the ZDP-189 core and cladding are stainless steel so upkeep is easy. The fit and finish is good with eased spine and choil, a basic but well-made yew wood handle with buffalo horn ferrule, and an included friction fit saya. The profile is versatile with generous finger clearance, a sweet spot at the heel for chopping, a gentle belly for rocking, and a thin pointed tip for detail work.

    5  Sunkenari ZDP 189 Damascus Gyuto 240, September 6, 2016

Let me fist say that this is a very impressive looking knife. Construction is top notch and worth every dollar. Very sharp out of the box but I did need to touch it up a bit with a 6000 and 10000 stone and now it cuts like a laser. I have a few knives now from CKTG and they have been very good. Selling off some MAC knives now to make room for maybe one more knife.
