This Suisin Inox Western Style Gyuto measures 240mm on the blade. Suisin Inox are made by a combination of INOX carbon steel with an addition of Molybdenum and Chromium. The result are knives that are both rust resistant and can hold an exceptionally sharp edge. We really like these knives and they make a great introduction to Japanese knives for those just beginning to explore them. The knives are hand finished which gives them extreme sharpness out of the box.
Well balanced,70/30 double bevel,sharpness out of the box left something to be desired,but a little time on the stones fixed that. I use this knife in a professional kitchen and its definitely a workhorse. This is my first gyuto,so I have nothing to compare it to. The edge retention is great and molybdenum inox steel is a breeze sharpen. The only reason it got four stars is the fit and finish out of the box,spine needed rounding and cutting edge sharpened,the guys at chefknivestogo.com are great they will answer any question to the best of their knowledge and the shipping was fast,from Wisconsin to Atlanta in three days,thats what I call service. I ordered this knife because I needed a "super sharpy". That is what I got,but it still seems to stain very easily. Even after one use,I could see spots (hopefully not rust,or else I was lied to) on the flat side of the blade.
