The laser class of knives is coveted by kitchen cutlery enthusiasts for their thinness, which provides minimal wedging and effortless cutting, and their lightness, which reduces fatigue during use. This Suisin Inox Honyaki 240mm gyuto is one of the definitive knives in the laser category. Extremely thin with excellent grinds, these knives offer exceptional performance. The name Honyaki refers to the use of a single piece of steel rather than a laminated sandwich. The steel used is a very pure, small grained Swedish stainless steel that is capable of taking very keen edges. The steel is hardened to 61-62 HRC which balances the ability to take very acute bevel angles with toughness for durability. The octagonal yew wood handle with buffalo horn ferrule is well made and cleanly installed. Suisin knives are well regarded for their high quality fit and finish. This knife comes with a custom fit saya included. Suisin knives are asymmetrically sharpened.

    the best thing about this knife is that it is just plain fun to useÖ Just downright exciting, actually. I give this knife 10 out of 10 and would recommend it to anyone looking for the best wa-gyuto. It does take a little adjustment in technique to be able to use this knife well, but it is really worth it.

    very light. takes a really sharp edge. touches up nice on a 4000 Imanishi stone. 20-30 strokes, right back to the initial edge. (15 degrees, 70/30). easy to clean, warm water, and soap, don't even need a green scrubby, just use your fingers. definitely not a workhorse, but still a great knife.
