I live in south west florida and keeping a high carbon steel rust free, even with a strong patina, is extremely difficult, especially in a very busy, humid kitchen. Out of the box the knife is pretty darn sharp, its well made with very good fit and finish. After extended use I found the spine needs a little more rounding with the stones, at the end of my 13 hour day it had become a little uncomfortable. I used this knife all day on valentines; portioning salmon, wahoo, mahi mahi and other fish, at least 30 pounds worth. I broke down 5 psmo tenderloins, sliced 6 whole ribeyes both raw and cooked. I butterflied pork loins and cut chops. This knife did it all. After a full day of use I would say it needs just some light stropping on my 6k stone. It has some flex in it, but not quite as much as I like for skinning salmon sides. That just might mean that I need to learn the knife more. Over all I would call this a very good buy and is priced pretty accurately with free shipping. I would have given it an excellent rating if it had just a slight bit more flex.
