Bring on the rib roasts and raw tuna. This 300mm sujihiki, a Japanese-style double-bevel slicer, offers tremendous length to handle all your slicing needs. Its long, narrow blade is designed to glide easily through both raw and cooked proteins. Just grab the handle, pull back, and let the blade do the work. The Inox stainless steel is hardened to 59 Rockwell so the blade takes and holds a great edge. We recommend these knives for those making their first foray into Japanese knives.

    I needed a good slicer at a reasonable price, one with plenty of length, some flex, and stainless. I live in south west florida and keeping a high carbon steel rust free, even with a strong patina, is extremely difficult, especially in a very busy, humid kitchen. Out of the box the knife is pretty darn sharp, its well made with very good fit and finish. After extended use I found the spine needs a little more rounding with the stones, at the end of my 13 hour day it had become a little uncomfortable. I used this knife all day on valentines; portioning salmon, wahoo, mahi mahi and other fish, at least 30 pounds worth. I broke down 5 psmo tenderloins, sliced 6 whole ribeyes both raw and cooked. I butterflied pork loins and cut chops. This knife did it all. After a full day of use I would say it needs just some light stropping on my 6k stone. It has some flex in it, but not quite as much as I like for skinning salmon sides. That just might mean that I need to learn the knife more. Over all I would call this a very good buy and is priced pretty accurately with free shipping. I would have given it an excellent rating if it had just a slight bit more flex.
