The deba is the traditional Japanese knife used for filleting fish. This 180mm Suisin Inox Honyaki deba is an exemplar of this type of knife with the outstanding fit and finish that is Suisinís hallmark and a first rate cutlery steel for excellent performance. Honyaki refers to the type of construction of these knives in which there are no cladding layers, only a single piece of steel. In this case the steel used is a highly pure, small grained Swedish stainless steel which promotes keener edge taking. The knife is hardened to a Goldilocks ~61HRC which balances acute bevel taking with some toughness to extend edge life. These knives are ground on one side only so they require a unique technique for using and sharpening and are strongly right hand biased. The yew wood handle with buffalo horn ferrule has octagonal facets on the top and side and a radiused bottom for added comfort during use. These knives come with custom fit sayas included for convenient storage and transport of the knives.

    This knife works very well as my fish fillet knife. This knife holds a beautifully sharp edge only needing quick touch ups. The fit & finish on this knife is the best I've seen. Suisin does not mess around when it comes to giving their knives a great finish (even the spine is mirror polished).

    Just a heads up, this knife is NOT a butcher knife and shouldn't be used as such. The edge on this knife is not meant to cut through bones and will chip if you try. All that being said, if you use this knife correctly and for its intended purpose, it is a joy to use. Love going to work in order to use this to fillet fish.
