This Sugimoto Cleaver measures 190mm X 95 and has a thin blade for easy use when chopping vegetables, fruits and anything else for that matter. The RC hardness of the Western CM knives is 58 ~ 63 and the cleaver is made from chromium and molybdenum steel. Sugimoto is known through out Japan for their quality Chinese Cleavers and they own a large share of the market. This particular cleaver is made with Chromium and Molybdenum and takes a very sharp edge.

This nimble and very sharp cleaver is now my #1 prep tool. My Chinese made cleavers are relegated to conversation piece status and my Gyutos are generally resting in the knife block.

This wonderful cleaver is the perfect size for 1-4 people. Stainless is the way to go if you cannot assure your knives are cleaned and dried immediately after use. In addition,the service from this store is fantastic. If you have any questions,simply contact the owner. He is quite knowledgeable.

Lovely knife. Beautiful handle,very good balance. When I chop even gently on end-grain,sometimes the blade sinks in - knife stays upright if I let go! Overall great design and steel for a below-custom knife. Recommended.

I am a pretty skilled cook and cook at home 4-5 nights a week. I really debated on cleavers,and being my first cleaver purchase I really struggled with spending a lot of money on a knife I wasn’t sure I’d love. So after a lot of reading of reviews and ultimately winding up on this site I decided on the Sugimoto because of the company’s history and then on the #30 because of the cost and other reviews. I can tell you now after using the cleaver for a few weeks that a) I really like using a cleaver for prep work and b) I am not disappointed at all on the decision to go with the #30 vs the #6. I can see myself being happy with this cleaver for a while and maybe upgrading down the road. If you’re looking to try out a cleaver you won’t go wrong with this choice.
