This 240mm gyuto by Sukenari is a middle weight, workhorse knife with a high quality core steel and a versatile profile. Maintaining the Sukenari Ginsan is easy as it is an all stainless steel knife with a Ginsan steel core and a stainless steel cladding. Ginsan steel is a well-respected cutlery steel which takes a very good edge easily. The knife is extremely versatile with enough weight to give the knife great chopping power, a good grind providing performance, and a thin, pointed tip for finer tasks. Fit and finish are good with a radiused spine and eased choil. There are a number of knives on Chef Knives To Go that share the Sukenariís performance characteristics and price range but few offer all stainless steel construction making this knife an excellent option for anyone looking for this construction.

    This knife has a great finish. Nicely finished off spine and choil. The profile works well for push cutter and rockers. I had never tried ginsan steel before so didn't know what to expect. Not quite nice to sharpen as white #1 but a great choice if you'd rather not have to worry about making sure it's dry. It makes for a great workhorse knife that isn't so delicate you're worried about chipping it.

    I got this and haven't touched another knife in my roll since I got it other than a paring. great edge retention and wicked sharp. i went thru a case of red and green pepprs diced and sliced two cases of onions sliced diced and wedged two cases of tomatoes and sliced cukes cut potatoes made a couple honey dew swans and some cantaloupe bowls and it just goes and goes i love this knife i liked it at first but after a heavy prep day and some home cooking experimenting at the end its just so fun to use
