Shun Sumo Wide Santoku: Has a good balance. The width is in-between the standard Santoku & a Chinese style vegetable cleaver. My Asian wife (and a superb cook) loves this knife. Use a magnet bar to store your knives,forget the bamboo holder. C.T.
