Posted By: Dan N.I've now had the Shapton Pro 1K, 2K, 5K and 8K stones for over a year. These are fantastically hard and cut very quickly. I soak them for only about a minute before use--they really could just be "splash and go" if you're in a real hurry. I use them on my White steel (shiro-ko) and Blue steel (ao-ko) Japanese single edge (yanagi, usuba) and double-edge (gyuto/chef) knives and with very little work I get razor sharpness and long lasting edges. I have used, and will never again use, cheap stones. These Shapton stones are pricey, but the result is a night-and-day difference.
