Shiro Kunimitsu knives. These are excellent knives made by sword maker smiths from Fukuoka Japan. The knives you see here are stainless clad with Yasuki steel core. This is called san mai construction and is done to give the blade stainless protection right down to the edge where the Yasuki steel is revealed for the hard cutting core. This is done to prevent the blade from rusting and easier maintenance. It is important to wash the knife thoroughly after each use and to wipe dry with a clean cloth. The proper way to cut is to use a slight pressure rather than pushing down on the knife.
