The Shiro Kunimitsu family has been making swords since 1786, and is one of the last families to use traditional techniques that have been passed down through the generations. Known for making swords of exceptional sharpness, the greatest honor for this family has come from having created a sword that was dedicated to a past Japanese emperor.

The Kunimitsu santoku 170mm is made from Yasuki steel (white #1) which is forged between layers of stainless steel, san mai style. It is heat treated to 61 Rockwell. The cladding adds a layer of protection to the blade but does not negate the need for careful washing and drying after use.

The knife comes with a basic solid wood Western style handle which endows it with a blade-heavy weight balance. The word santoku has Japanese historical significance, meaning ďthree virtues.Ē The santoku knife wears its name quite proudly, with its marvelous chopping, cutting, dicing, and mincing abilities. This style of knife has become very popular with today's homemakers. It's not unusual to find one or two in a kitchen and it has become the go-to knife for many uses.
