Menkiri means “Noodle Cutter” in Japanese. This knife is made with the singular purpose of finely cutting noodles into perfectly thin strips. It achieves this tricky task by having a blade that is entirely flat along the edge so as to contact the cutting board with no gaps. The blade edge also extends to the ends of the handle, thus covering the entire width of the dough and ensuring a clean cut which does not damage the structure of the noodle.
Like the other knives in the Blue line, Shun has built this blade using the san-mai method of covering a core steel with a single layer of another steel. In this instance Hitachi blue paper #2 fine grain carbon steel is covered with a stainless steel to reduce maintenance and ensure a long lasting mirror finish. The exposed bead blasted edge will develop a patina over time which further protects the edge from rust. Care needs to be exercised in keeping the knife dry between uses and stored out of damp areas.
A beautifully finished dark brown striped handle is attached to the blade with two stainless rivets. A matching saya is included to protect the fine cutting edge.
