The Honesuki is a lighter and thinner version of the classic Garasuki butchering knife. Its short, triangular, pointed blade enables the user to get into the tightest places while stripping meat from bone cleanly and efficiently. While it is inherently a strong blade it should not be used for cutting through bone.

The Shun Blue Steel Honesuki is a san-mai construction wherein blue #2 carbon steel is sandwiched between two layers of stainless steel. The Blue #2 steel is hardened to 61 Rockwell and takes on a great edge. You will see it develop a lovely patina along the edge where the blue steel is exposed. A proper maintenance regime of hand washing and carefully drying is still required to keep these knives looking good.

Beautifully crafted, these knives feature a mirror-polish that enhances stain resistance, while the light bead-blasting along the edge shows off the san-mai construction. Each knife features a traditional Japanese style handle and comes with a plastic saya or knife sheath.
