This Sakai Takayuki White Steel Dragon line of kitchen knives is one of the best-selling Japanese knives for professional chefs. Using White #2 steel and quality sharpening, these fine blades have a fit and finish that is as good as the price would suggest!
This lovely Yanagiba is made from Shirogami #2 steel with a soft iron cladding. The core steel is hardened to 61-63 HRC. The blade has a very nice blade path which exposes the inner core near the edge. The upper part of the blade above the ridge line has a handsome kasumi finish and features a stunning hand chiseled dragon motif.
The back side of the blade has a flat profile with a very small concave built in to aid in food release. There are 5 kanji characters embossed on this side.
These knives are hand-forged by Keijiro Doi who entered blacksmithing at the age of 19 as an apprentice to his father. He is considered a traditional craftsman and in 1987 received the highest honor from The Ministry of International Trade and Industry. These are truly beautiful and high quality knives, made with precision and care in Sakai, Japan, under the watchful eye of master craftsmen Mr. Keijiro Doi, his son Itsuo Doi, custom knife master Keido Sugihara, and master grinder (for sharpening and finishing) Yukinori Oda.
These are extremely sharp finely crafted knives, guaranteed to perform at a high level.

    As I said of the Blue Steel Yanagi by Mr. Doi, go and buy it before it is gone. These are exceptional knives, one of a kind edge, very sharp, keeps its edge, and easy to sharpen. He is retired and this is your last chance. I have both blue steel and white steel Mr. Doi yanagis. I love them both. Blue steel yanagi is much smoother, this white steel yanagi is more aggressive. I think, he loves blue steel better, though.
