This Sakai Takayuki White Steel Dragon is one of the best-selling Japanese knives for professional chefs. Using White #2 steel and quality sharpening, each knife is engraved with a dragon design. These knives are hand-forged by Keijiro Doi, who, born in 1927, entered blacksmithing at the age of 19 as an apprentice to his father. He is considered a traditional craftsman and in 1987 received the highest honor from The Ministry of International Trade and Industry.
As I said of the Blue Steel Yanagi by Mr. Doi,go and buy it before it is gone. These are exceptional knives, one of a kind edge, very sharp, keeps its edge, and easy to sharpen. He is retired and this is your last chance. I have both blue steel and white steel Mr. Doi yanagis. I love them both. Blue steel yanagi is much smoother, this white steel yanagi is more aggressive. I think,he loves blue steel better, though.
