The Takayuki Shiden Yanagiba 240mm is an example of the pinnacle of Japanese knife art. This beautiful yanagiba is handmade by a team of consummate craftsmen, Mr. Hirotsugu Tosa and Mr. Keido Suhihara.

The blade is made from Yasuki Silver 3 Steel and painstakingly hand-ground by Mr. Hirotsugu Tosa. Silver 3 steel is more commonly known as Ginsanko steel and is made by Hitachi at its Yasuki factory. He hardens the stainless alloy to 62-63 Rockwell which endows the blade with a very resilient and sharp edge.

The handle is designed by Mr. Keido Suhihara and is made of desert ironwood. We think it is one of the finest stock handles we have seen. The fit and finish of both the blade and handle are as good as it gets.

This is a classic yanagiba so it is a single-bevel knife capable of producing the finest slices of fish and other proteins without damaging the cellular structure or aesthetic of the product. This is the shortest length yanagis usually come in so it is perfect for chefs working with limited kitchen or board space.

While it is a stainless blade, care should still be taken with the cleaning and drying of the knife. After all, you want your work of art to stay looking as good as the day you bought it. To help with this the knife is supplied with its own custom wood box.

    Hi Mark, I didn't want to report prematurely,,, do you know how sushi
    chefs are about their knives?,,,, Well this guy is revered by many,,
    other chefs dine at his restaurant,, he took some time, a ritual,
    left in tied with ribbon for a while, only opened it to study and
    admire,, began using it on Jan 1st. He absolutely loves it and uses
    it only to cut the finest sashimi ! Please send our appreciation to
    the people at Sakai who crafted this beautiful piece of functional
    art. It is truly a masterpiece! I may ask you if you can see if they
    would consider a custom knife, same desert ironwood handle in a chefs
    knife configuration.. That's what he uses for chopping vegetables,,,
