In Japanese the word Miroshi means filleting. Miroshi deba, as the name suggests, is optimized for that particular task. It is more slender and longer than typical Deba knife. This single ground blade looks more like a Gyoto than a traditional Deba. This longer and thinner shape can accomplish many general slicing and cutting duties. But at heart it is still a Deba and as such is an excellent blade for butchering smaller proteins, most seafood and poultry.

The blade is intended for right handed users as it has a single convex grind on the front and a slight concave back side ground flat at the perimeter. It is constructed with a core of Hitachi White Paper #2 steel covered in an iron cladding. The blade is therefore reactive and subject to corrosion if not cared for properly. It has a very good edge out of the box and sharpens with relative ease.

A nicely rounded D shape handle made from Ho wood and buffalo horn add to the fine balance of this knife. Which is slightly blade heavy. There is a lovely custom wood saya included which further adds to this already good value item.

This knife is exactly what it says it is. This has become my butcher workhorse. No problems with seafood,poultry,small lamb,or pig bones. Iíve been skeptical of white #2 steel but this blade has made me think twice. A solid value.
