The Richmond SAB 250mm Chef Knife is modeled after the iconic Sabatier 10" Chef knife. This classic blade is arguably one of the most popular chef knives ever made. Our knife takes this classic design and upgrades and changes it is a few important ways.
First, the Richmond uses a stainless steel called AEB-L. A very popular alloy used originally to make razor blades and more recently in cutlery production. It has great toughness and durability and in this instance it has been heat treated to 61 HRC. The blade is a mono steel construction, so no cladding. This is a very easy steel to care for and an easy blade to sharpen.
The blade shape is classic Sabatier. A fairly heavy flat spot near the back gives way to a steep curve to the tip. It has a generous blade height and the spine is quite thick. Since this is a tall knife we also eased the heel so you don't dig it into the board or cut yourself on the back of the heel of the blade. There is a slight distal taper towards the thin tip. It has a fairly robust edge thickness and comes out of the box with a sharp edge with a nice amount of bite.
Another differing point is in the handle design. Here the Richmond eschews the normal heavy Western bolster in favor of a bolster-less design. The extremely tough handle made of black linen micarta is virtually indestructible. It has a very rounded and streamlined shape that, coupled to the bolster-less blade, gives an almost Wa feel to the knife.
The Richmond SAB AEB-L is a very impressive homage to a classic knife, at a price far lower than the original.
