There are some very minor scratches on these blades so we decided to close them out. Last call on these nice, tall gyutos. Save $45 over regular price until we run out. The Richmond SAB 250mm Chef Knife is made with top quality AEB-L stainless steel and the knife shape is modeled after the iconic Sabatier 10" Chef knife.

The blade is a mono steel construction and is very easy to care for. This knife is perfect for a pro cook that wants something that is durable, easy to sharpen and maintain and that can withstand the rigors of a pro environment. It has a generous blade height and since this is a tall knife we also eased the heel so you don't dig it into the board or cut yourself on the back of the heel of the blade. There is a slight distal taper towards the thin tip and the knife has a good, robust edge out of the box with a sharp, toothy edge

Another differing point is the handle. The extremely tough handle is made of black linen micarta and it's virtually indestructible.

    Excellent value for the money, provides the feeling of a classic Sabatier even better than the new Sabatiers do today. Initially I decided to buy it only because of it's Sabatier profile and expected it to be a kind of "Sabatier visits Japan" type of double-beveled blade. If it was a bit thinner behind the edge it would be perfect, also wooden handle would make me pay a few extra bucks for it and increase the rating to "excellent". AEB-L is my favourite stainless steel and did not disappoint me this time. CKTG does not deliver directly to my country so I used a shipping company to deliver it. It took around two weeks, included some additional shipping, customs and sales tax cost, but it was all worth it.

    I bought this as my beater, but was pleasantly surprised! It has a fantastic distal taper so the front half of the knife works quite well! The back half is almost too thick behind the edge, meaning you could thin it a little and it would perform beautifully I bet or leave it as I have and keep it as a tougher beater. Edge retention is so so, but it sharpens easily! The profile is fantastic! All sab, but with more height like I prefer. Great blade and well worth the price. I cube many yams a week with it and it makes light work of them!

    - Very sturdy, tackles root vegetables well.
    - Light and comfortable to wield.
    - Sharpens easily.
    - Good rocker and chopper.
    - Blade heavy.
    - Great convex grind near the tip.

    - So-so OOTB sharpness
    - Handle needs sanding, can be uncomfortable if not sanded.
    - Thick behind the edge. Will make it harder to sharpen in the future.
    - So-so edge retention.

    This is a good knife for the money. It will do prep work in a professional setting with ease. It's very comfortable once sanded down in parts, it doesn't fatigue your hand at all. It doesn't stay super sharp for long (2 days in a busy kitchen), but it does sharpen easily. I need to sharpen every 2 days, but I abuse it in a busy kitchen. The fuller belly is nice, but that's a personal preference.

    If you need a knife that can take a beating, you need to cut through hard vegetables regularly, and you're on a budget, pick one of these up. The SAB's like a much lighter, sharper German knife that sharpens up better.

    OOTB f&f was solid. No gaps between the tang and handle material. The choil has a slight rounding to it, still a bit of an edge, but not much. I like the lack of bolster on the knife, which makes what could feel like a heavy knife into a more slender one, not unlike traditional Japanese knives.

    To rate the cutting OOTB, i would give an 8/10. A quick few runs over a 6000 stone made it hair-splittingly sharp, however, the knife needed some slight thinning behind the edge to really slide through food. The extra height in this knife doesn\'t make it feel like it will topple over through a cut, because of some nicely balanced weight distribution. As a professional cook, I am pleased with this knife and will use it as my all purpose knife to replace my more fragile Misono Swedish. This guy feels sturdy so I feel comfortable using it on the hardest of foods like butternut squash without worry.

    If you\'re looking for a larger length, all-purpose knife under $100, I can see this being amongst the top offerings.
    Quick shipping and excellent handling/packaging makes me feel comfortable buying from CKTG for all my cutlery needs.
