Posted By: DevinOOTB f&f was solid. No gaps between the tang and handle material. The choil has a slight rounding to it, still a bit of an edge, but not much. I like the lack of bolster on the knife, which makes what could feel like a heavy knife into a more slender one, not unlike traditional Japanese knives.
To rate the cutting OOTB, i would give an 8/10. A quick few runs over a 6000 stone made it hair-splittingly sharp, however, the knife needed some slight thinning behind the edge to really slide through food. The extra height in this knife doesn\'t make it feel like it will topple over through a cut, because of some nicely balanced weight distribution. As a professional cook, I am pleased with this knife and will use it as my all purpose knife to replace my more fragile Misono Swedish. This guy feels sturdy so I feel comfortable using it on the hardest of foods like butternut squash without worry.
If you\'re looking for a larger length, all-purpose knife under $100, I can see this being amongst the top offerings.
