The Richmond SAB 250mm Chef Knife is modeled after the iconic Sabatier 10" Chef knife. This classic blade is arguably one of the most popular chef knives ever made. Our version differs in several important ways.

First, the Richmond uses a high carbon steel called 52100 Carbon. A chromium alloy steel, 52100 is excellent for use in forging, grinding, and cutlery production. It has great toughness and durability and in this instance it has been heat treated to 61 HRC. The blade is a mono steel construction, so no cladding. This is a very reactive steel so care must be taken with its upkeep. It is, however, an easy blade to sharpen.

The blade shape is classic Sabatier. A fairly heavy flat spot near the back gives way to a steep curve to the tip. It has a generous blade height and the spine is quite thick. Since this is a tall knife we also eased the heel so you don't dig it into the board or cut yourself on the back of the heel of the blade. There is a slight distal taper towards the thin tip. It has a fairly robust edge thickness and comes out of the box with a sharp edge with a nice amount of bite.

Another differing point is in the handle design. Here the Richmond eschews the normal heavy Western bolster in favor of a bolster-less design. The extremely tough handle made of black linen micarta is virtually indestructible. It has a very rounded and streamlined shape that, coupled to the bolster-less blade, gives an almost Wa feel to the knife.

The Richmond SAB 52100 is a very impressive homage to a classic knife, at a price far lower than the original.

    Pretty good deal for its price. Feels a little bit light. Lacks a but if sturdyness to the handle but this could be just my hands being a bit big.
    Still need to allow some time to see what's with the edge retention. Being a 52100 we'd say no need to worry but ther's a lot behing blade making that could make this blade not as good as so many others out there with this same steel. Luckly Mark understands about his business and I reckon he'd go only for a bladesmith who could deliver a good product for him to put his name on it.
    Anyway, so far so good.

    This knife is fairly sharp out of the box. This is not the prettiest knife out there, but it appears that it will get the job done. I have not had it that long yet, but so far the results are good.

    Recently picked up this workhorse and couldn't be more pleased with it. Perfectly balanced, great size, highly functional profile, utilitarian handle, and the distal taper on the tip makes detail work a breeze. The steel isn't too reactive and has the ability to get wicked sharp; although it came pretty sharp out of the box. At this price point, I don't think there is a better knife in existence.

    Besides the small nick on the knifes edge the knife is just what I wanted. Definitely would have been 5 star if it were not for the nick.
