Richmond SAB 250mm Chef Knife is modeled after the iconic Sabatier 10" Chef knife and is made with premium 52100 carbon steel, better handles and no clunky finger guard and higher hardness at HRC 61. Since this is a tall knife we also eased the heel so you don't dig it into the board or cut yourself on the back of the heel of the blade. Here you can get the great shape, with great steel and handle for less than the original.
Recently picked up this workhorse and couldn’t be more pleased with it. Perfectly balanced,great size,highly functional profile,utilitarian handle,and the distal taper on the tip makes detail work a breeze. The steel isn’t too reactive and has the ability to get wicked sharp; although it came pretty sharp out of the box. At this price point,I don’t think there is a better knife in existence.

Besides the small nick on the knifes edge the knife is just what I wanted. Definitely would have been 5 star if it were not for the nick.
