The Remedy is a western handled chef knife (gyuto) that measures 9.4 inches long or about 240mm on the edge and is made in the USA by our partner Lamson & Goodnow. I designed this knife to be light, thin and hard. This version has a handle made of Cocobolo. The steel used on the Remedy is called CPM154 and is generally reserved for custom knife makers. We had the knives professionally heat treated by Peter's Heat Treat in PA. The steel was tested out at HRC61 which will allow for a steep edge that will last.
This is a pre-review review. Been waiting for this awhile,and if it is anything like CPM154 should be and performs like my other high-end steels,then I will be one happy camper. I just hope that I get one of those custom handles in time.
Great knife and great value. This knife is quite a bit thinner than my Konosuke HD 240 gyuto which is one of the thinnest knives out there. The geometry is much different than the Richmond Addict which is thicker,taller,and has more belly. The cocobolo handle uses beautiful wood and it is put together very nice,but not perfectly. The steel takes a great edge and is very stain resistant. It does take more strokes to sharpen and a felt deburring block is highly recommended. Iíd rate the edge holding between a Konosuke HD and a TKC,but havenít sharpened it enough to be absolutely sure. Highly recommend paying extra for the finish sharpening.
This is by far my favorite knife to come out of the mind of mark Richmond,classic lines,tough steel,and the handle is to die for I actually wish he would make more of his knifes with this handle,unless u are an experienced sharpener I highly recommend the sharpening service for this steel is no joke it is tough but once the bevel is set and the proper edge is placed I don’t think there is a better knife out there. How this beauty missed the mark up in the food magazines is beyond me it should go down as one of the best looking and performing knifes in history. Peace jmbullman
