The 240mm gyuto is arguably the most popular Japanese knife style and size. It is the true all-rounder in the kitchen, even in small work spaces. Gyutos are the Japanese version of the ubiquitous Western Chef knife, capable of handling and processing almost every kind of produce and protein.

Our Richmond line of AS knives are classed as lasers due to their very light weight and thin grinds. This particular blade has a nice thin spine which transforms into a distal taper as it gets close to the thin tip, one of the outstanding features of the blade. It is so well executed that the knife can tackle work that would normally require a petty or similarly small blade. Add to this a profile that is neither flat nor too rounded and you have an instrument fit for many purposes and styles of cutting.

Richmond AS Laser knives are constructed using the san-mai method of cladding. In this case a softer stainless steel is used to encase the hard AS steel which protects it from damage and corrosion. The AS hagane is hardened to 63 HRC which gives the blade the ability to take and hold a super sharp edge. Top this off with a lovely handle made from Tiger Maple and Wenge for the ferrule, and you have a knife that looks, feels and performs as well as any in or above its price range.     This knife is really a fantastic and functional work or art. The handle is stunning. The AS core develops its dark patina and offers a very pleasing contrast to the satin-like finish in the middle of the knife, which pairs perfectly with the more polished finish at the top of the knife.

    This knife is capable of obtaining the scary sharp edges that we all covet AS steel for. The edge retention is probably the best of any knife I've used. Without other knives to sharpen in between, you may forget how to sharpen all together.

    The one downside to this knife(in my opinion) is that the spine is not rounded even in the slightest which irritates and exacerbates my callous when doing larger than normal amounts of knifework.

    With easy-to-care for stainless cladding and about 1cm of AS which is super easy to care for if kept clean and dry when not cutting this knife is a no-brainer for anyone who has the money to spend.

    I would absolutely and wholeheartedly recommend this knife to anybody

    I've owned, and still own, knives from every major knife hub on earth... and this one crushes them all. In a professional kitchen this is my go to every day knife. It can do everything from butchering primal cuts of meat to making vegetables seem as if they weren't even there. This knife will make short work of whatever you put under its gorgeous blade. The pattern the patina takes on the lowest edge of the blade is beautiful and adds unique character to each knife. This is the best purchase you can make on this or any other website. You'll regret it if you pass this one up.

    Not bad for the price but would not consider this knife a laser, for an OEM knife it\'s OK but blade needed a good polish, service from CKTG is good and considering my location postage was timely.

    This knife is hot! Had minor warps, but easily straightens out. A thin blade. Nothing quite like it. Great for the price. And it has aogami steel.

    Realy a laser.
    It`s a light weight 240 gyuto and a pleasure to work with.
    Hold a very good edge and it`s easy to sharpen. A few strokes on 5k natural Kouzaki Aoto and its incredible sharp.
    Would i recommend this knife. Yes.

    I watched the video and was impressed with the knife. Upon opening the box the knife is super light. The handle glows in the light with stripes. Most comments have been about the handle. Everyone in the Hotel kitchen wants to use this knife. Tried on fish, chopping cucumber, red peppers, onions.
    Excellent on most items. Never seen anything like this knife in any shop.
    Would i recommend this knife. Yes.
