The Richmond Laser AS Gyuto 210mm is a fantastic knife suited for almost all of your cutting and chopping needs. Itís small enough for fine detail work and processing but big enough for tackling all but the largest of ingredients. The laser like size and weight give this knife a quick and nimble feel. Its small thin tip simply flies through food, while its fairly flat belly shape make it a great choice for both rockers and push cutters.

It boasts a nicely finished spine with a slight distal taper towards the tip. It is a great looking blade but not in a bling kind of way. The really nice grind is accentuated by the application of a sand blasted artificial shinogi line leading to a very thin edge.

The Richmond Laser AS line features the wonderful Aogami Blue Super steel. Renowned for its ability to take on a screaming sharp edge and hold that sharpness through extended use. This knife has a san-mai construction using a softer stainless steel as the jigane so only the edge is reactive. This makes the knife a breeze to maintain compared to other high carbon types.

The handle is made by one of our favorite woodworkers, Isaiah Schroeder, and is made with tiger maple and a wenge ferrule. There is an optional saya available for protection and storage. .

    I bought this knife 2 years ago. It was my first japanese blade. I learned to love it more and more everyday, especially now that I started working in a professional kitchen. I was sharp OOTB, but it is even sharper now that I learned how to sharpen it on a stone (King 100/6000). Blade is thin, light, nible, well balanced and dangerously sharp. I think this is an amazing knife for the price. Great place to start if you want to get into japanese blades!
