Is bigger better? Well, it depends on several factors including workspace area, job requirements and user preference. If you find that these criteria are best met by a larger knife, then the Richmond Laser AEB-L 270mm Gyuto Bubinga could be the blade you are looking for.

For all of its larger dimensions the Richmond Laser 270mm is a nimble and responsive cutting instrument. It has a very thin 50/50 grind and a slim spine. The blade is very light and is perfectly matched to the slender octagonal Bubinga handle made by our woodworker Isaiah Schroeder. This combination results in a balance point which is just forward of the pinch grip place. The almost constant spine thickness gives the knife a stiff and responsive feel despite its laser profile.

AEB-L is a wonderful stainless steel alloy with attributes that make it a great choice for the construction of kitchen cutlery. The super fine grain structure of AEB-L gives rise to a blade that has excellent toughness, edge retention, workability, ease of sharpening, and ease of polishing. These characteristics perfectly describe the Richmond Laser Gyuto. There is also little maintenance required to keep the knife looking and performing at its peak which further enhances its ability as a daily kitchen work horse.

    This is hands down the sharpest knife I've ever owned. On my first day with it I got a cut that's about 3mm deep.

    Lases through onions, zucchini, mushrooms, and especially likes to butterfly-cut chicken.

    I have not sharpened yet, but will probably need to soon because of a micro chip on the belly due to cutting chicken that was sort of icy.
