The sujihiki is a Japanese-style slicing knife with a thinner, sharper edge than Western versions. The long blade of the sujihiki is ideally suited for thinly carving cooked meats and other proteins. It also serves well as a sushi knife for those not wanting a single bevel knife. The double bevel is easier to sharpen and maintain and is ideal for most western applications.

AEB-L is a Swedish stainless razor steel. It is a very pure, fine grained alloy. AEB-L is virtually identical to Sandvik 13C26 Steel. It has slightly less Mn and 0.010% more S. When heat treated properly it produces a very small, fine grain which positively affects edge holding, edge stability and toughness. Several top custom knife makers employ the steel in their kitchen knives with very good results. The common working hardness in kitchen and light cutting knives is 61-62HRC.

Combining ease of use and maintenance with the ability to take and hold a very sharp edge results in a slicer that can find favor in any professional environment or home kitchen. The blade is coupled to a lovely, classic octagonal Wa handle made from Bubinga wood with a Wenge ferrule.
