Japanese Gyutos are the equivalent of the Western Chef knife. They are usually a built a bit lighter and thinner with a slightly flatter profile. In general, gyutos run from 180mm to 300mm in length. So this 270mm knife occupies the upper end of the size range. Other dimensions of note are the blade height of 50.5mm which is a nice height for those looking for more board to hand clearance. The knife has an ultra thin profile which gives rise to the name, laser. Starting at the heel the spine measures 2.4mm. This tapers down to an ultra thin tip measuring just over .7mm.

CKTG has these blades constructed from one of the finest grain stainless steel available, AEB-L. These steels can be hardened to a higher range than other types and in the case of our lasers we specified a rate of 61 HRC. The fine grain structure of AEB-L endows the steel with a great ability to take and hold a super sharp edge. Even though it is a really thin blade, it is not lacking in toughness and an ability to take on most ingredients. As a bonus the stain resistance of the metal results in a knife where maintenance is kept to a minimum.

The finely finished blade is beautifully enhanced by an upgraded octagonal handle made from magnolia wood with a buffalo horn ferrule. This is great chef knife for those working in a high output kitchen or a situation where space is not limited and thus, knife size is not an issue.
