CKTG are very proud of our in-house Richmond branded kitchen knives. None more so than the AEB-L Laser range. Setting out to produce an easy to use and maintain line of kitchen knives, we chose our favorite stainless steel as the core component in this quest. AEB-L is a very finely grained steel. In fact it is the most finely grained steel, along with 52100 Carbon steel, used in the manufacture of kitchen cutlery. This fine grain structure makes the steel easy to grind while possessing great edge retention and polishing characteristics. We specify a hardness of 61HRC for these blades, which is the sweet spot for this alloy in our opinion.

Gyutos are the Japanese version of the western chef knife. They are a great all rounder with abilities that allow for a wide variety of cutting tasks and styles. The 240mm gyuto length normally occupies the mid point in most knife lines and that is no exception here. The blade profile is fairly average, displaying a small flat spot with a gentle curve to the tip. The grind is also about average for this size of blade and is set at 50/50. The edge is sharp right out of the box and keeping it tuned will be a fairly simple task even for less experienced sharpeners.

This knife comes with a fine rosewood handle and an ebony ferrule.

    Words almost cannot do justice to this knife. It is light, very thin, handles beautifully and looks cool. Love the shape of the blade and the in between 230 mm length. Just right. Amazing steel will quickly strop to scalpel sharpness and push cut tomatoes with ease. (See above videos!) Extremely sharp right out of the box. Excellent fit and finish. Mark Richmond has a knack for taking the best features of the best knives and putting them together in his own creations to produce some of the finest knives money can buy. This knife is a joy to use and you would be hard pressed to find anything better at any price.
