Richmond is our in-house brand of knives. The Richmond line is very expansive, covering many steel types, forging techniques and blade geometries.
The Richmond Laser grouping is comprised of 3 steel types. Aogami Super, Ginsan and my personal favorite, AEB-L. AEB-L was originally developed for razor blades by Bohler-Uddeholm. Sandvik copied AEB-L and calls it 13C26 (with slightly more Carbon and Manganese). These steels are formulated with just enough carbon for the steel to get very hard but not make any primary chromium carbides. Because of this, the steel has an extremely fine grain making it easy to sharpen. The fine grain also endows it with good edge holding and excellent edge stability. We have our AEB-L knives hardened to 61 Rockwell.
The Richmond Laser Petty is the perfect knife for small and delicate cutting tasks. It is light and nimble and excels at fine detail work like garnish preparation. It weighs in at a scant 2.4 ounces and earns its Laser nomenclature from the super thin (1.8mm) blade. The lovely blade is enhanced by the addition of a semi custom octagonal handle made from Bubinga wood with a Wenge ferrule.
This is great all round kitchen knife with excellent fit and finish and an easy to maintain stainless steel blade.
