Richmond Damascus 210mm Gyuto. This knife is stainless, san mai constructed with an ATS314 on the edge and a beautiful damascus pattern on the blade. The steel has been hardened to HRC 61 and will perform better than many stainless steel blades on the market today. Edge on the knife is 50/50 ground with a rosewood octagonal handle and ebony ferrule. The blade is tall at about 48mm at the heel. This line was made in Japan with my partner Yoshikane.
