The Richmond Artifex line of kitchen cutlery has been created for the line chef and home cook looking for quality, performance and ease of maintenance. All at a very attractive price point. Constructed from AEB-L stainless steel, these blades exhibit superior stain resistance and the ability to take and keep a very sharp edge.

The official name of this knife is Santoku-Bocho. Itís also known as a Bunkabocho. In Japanese this means knife of the three virtues. The reason for the name is that it refers to the bladeís ability to perform the three acts of chopping, slicing and dicing. Some chefs regard the Santoku as a more versatile blade compared to a Nakiri, the only real competition to it in the home kitchen. The Santoku has a relatively short blade, normally less than 200mm, together with a rounded tip with a slight point. It is always made with a two sided grind. This knife has a symmetrical 50/50 edge set at about 15 degrees on each side. We hardened this steel to 60.5-61 for the ideal hardness and toughness properties.

A nicely made G-10 (linen micarta) handle is attached to the full tang with two rivets. This is a really tough material that can stand up to years of use. But it is also very comfortable in your hand and light to use.
