Posted By: BrianNot as brittle or chippy as other blue steel knives I've owned. Edge retention is also not as good as other blue steel knives I own which is why I bought the knife in the first place. Soft steel. Couldn't cut saran wrap after two days on a sushi line. For comparison my other blue steel knives will generally last a week before sharpening. So I'd say the steel is pretty average. The edge geometry, however, is excellent and gives me very good control over the knife compared to either a typical suji or a yanagi. And the handle is fantastic. Just don't expect too much for $260.
