The Kurosaki Laser AS Sujihiki 270mm is made using top shelf Aogami Super steel, one of the best carbon steels used for kitchen knives. The hagane, or central core, is clad with a stainless steel jigane for added strength and corrosion protection. It is a san-mai construction which means that the spine still shows the inner core steel. The Aogami Super steel is hardened to 63 HRC.

This great looking sujihiki is an easy to care for knife with great fit and finish and a super sharp cutting edge. The edge is acute and has high wear resistance for long lasting sharpness.

The Kurosaki Laser AS Sujihiki comes with a nicely finished traditional octagonal handle. It has a 50/50 grind so it works equally well for right- or left-handed users. The lovely sand blasted primary bevel is enhanced by the addition of some fine chiseled kanji script.

Sujihiki knives are designed for slicing and carving jobs. Whether raw or cooked, proteins will fall prey to this narrow and thin blade. The 270mm length works well for most people. It does require a fairly open space and large cutting board to extract its full potential. Slices should be performed in a single pull action to minimize damage to the product.

    Not as brittle or chippy as other blue steel knives I've owned. Edge retention is also not as good as other blue steel knives I own which is why I bought the knife in the first place. Soft steel. Couldn't cut saran wrap after two days on a sushi line. For comparison my other blue steel knives will generally last a week before sharpening. So I'd say the steel is pretty average. The edge geometry, however, is excellent and gives me very good control over the knife compared to either a typical suji or a yanagi. And the handle is fantastic. Just don't expect too much for $260.

    This was my first AS knife experience and I gotta say its a game changer. stays razor sharp looks super cool and is a breeze to sharpen.
