The Richmond Artifex 150mm Utility is a very versatile knife. Itís narrow blade and thin profile allow it to be used in so many applications. Cutting and chopping all kinds of small to medium ingredients. Fine precise slicing of raw and cooked proteins. Preparation of fine garnishes. It can do them all.

The Richmond Artifex line of kitchen knives has been created for line chefs, home cooks and anyone wishing to experience the next step in transitioning from classic western knives to traditional Japanese blades. They are constructed from a single steel (mono steel), in this case AEB-L. This world class steel, also called 13C26 steel, was designed for razors which need corrosion resistance, high hardness and very acute edges. Now it is a commonly used alloy in the world of kitchen knives. Once you try a knife that is made with AEB-L you will see why it is coveted by knife enthusiasts and professionals. It is rust proof and easy to maintain. It is also easy to sharpen, even for novices.

The 150mm petty comes with a black linen micarta handle in a western shape. However there is no bolster so it is an interesting cross between western and Japanese. Pinch grip fans will like this arrangement.

    I bought these for my staff as gifts before Thanksgiving and they all came back from the weekend with a new understanding of sharp. Great quality at a great price these will last a lifetime, and it's always nice to support an American manufacturer.

    This is a great knife. I am a poor culinary student and this is the perfect knife for the price point. I use it only for service and it is holding a great edge.
