Richmond is our in-house brand of knives. They are custom made for us by some of the best blacksmiths in Japan. They have a san-mai construction utilizing Aogami (Blue) Super as the core with a stainless steel cladding. San-mai generally refers to knives with the hard steel hagane forming the blade's edge and the iron/stainless forming a jacket on both sides. In stainless versions, this offers a practical and visible advantage of a superb cutting edge of modern Japanese knife steel with a corrosion resistant exterior.

Not super tall for a petty, this lovely knife is the perfect tool for many cutting jobs in the kitchen. The nicely executed grind starts at the line of the katsumi finish. It is fairly sharp out of the box but a quick trip to your favorite fine stone will give the blade a screaming sharp edge. The use of AS steel, heat treated to 63 HRC, will ensure that it stays that way through protracted use.

The 150mm petty comes with an attractive handle made from Wenge with a contrasting Maple ferrule.

    This is an excellent example of the "mini-gyuto" petty. It is the same size and profile as many other petty knives, but the grind and authority of the knife make it feel more substantial than it is. The steel is absolutely terrific. I find myself reaching for this knife to cut and mince a shallot or some garlic, as it actually works as well for mincing as it does for dicing. And I love using it to slice or quarter grape tomatoes. The grind is a little thicker than some other petty knives and it is not as "laser-like" or effortless as some other knives (such as a Konosuke GS petty), but it also feels a bit safer and stronger because of its added heft, and there is no doubt that it gets sharp as all hell and cuts cleanly.
