Itto-Ryu is brand name for a line of knives produced by a very small blacksmith shop in Sanjo Japan. For competitive reasons they ask us not to mention their name. These knives have very thin edges and they drop through food. They're also easy to sharpen but care needs to be taken since the edges can be delicate right out of the box. If you don't know how to sharpen we can adjust the bevel on them to a more normal edge using our finish sharpening service.
