It absorbs water quite slowly, even slower than the 4k and 6k Ume stones. It is a hard stone, easy to use, allowing edge trailing and leading strokes safely. Not a muddy stone, yet it allows a large jump in grits with abrasive capability to refine an edge quickly. The metal swarf is easily removed by gentle rubbing of the stone surface with fingers.
The stone is harder than a Chocera stone, almost like the 8k Snow white. Edge performance is exceptional with effortless push and slice cuts.
I use a Nenox 230 mm Sujihiki knife with a Snakewood handle. At the time it was made, these knives were purportedly made of VG1 steel. The edge produced on this knife with this stone is of exceptional quality.
Next is a Nubatama Santoku. This is a knife made with a black steel core with what appears to be a stainless cladding. These are high end custom knives made with a black steel core, however both blue and white steel knives are also available from this master blacksmith in single and double bevel designs, including left handed single bevel knives.
I have been using this knife for months in a home kitchen and have never sharpened it, but have on occasion stropped it on Kangaroo leather or CBN and diamond ultra fine grits a couple of times. That's all it has needed to keep it VERY sharp. Just a few strokes and it restores it to an effortlessly cutting ultra high performance edge. This stone should be excellent for use with straight razors and woodworking tools (chisels, etc).
