This is a slightly longer version of the 175mm santoku but with a much taller blade measuring 48mm at the heel.

Like his other knives, Nishida-san forges his blades for the popular Shirogami (white) #1 steel. To make white steel and blue steel, one starts with a piece of JIS SK steel that undergoes a couple of purification processes to get rid of impurities. What you are left with is white steel #2. This is a nearly pure high carbon steel, containing 1.05-1.15% carbon, with very low levels of impurities (sulphur and phosphorus). If you further process white steel #2 and add more carbon, you get white steel #1. The additional carbon adds hardness, but decreases toughness.

The inner core of this great steel is protected and reinforced with a soft iron cladding san mai style. The cladding has a very attractive semi-smooth kurouchi finish which aids in food release and ease of maintenance. But don't forget this is a carbon blade, so keeping the knife dry and clean is of paramount importance.

The thickness and weight of the knife are on the upper side of the scale so this is a knife that would be perfect for those liking a Western weighted blade with a Japanese shape and edge geometry.

This particular knife has a traditional octagonal wood handle with a polished finish and no ferrule.
