The Nishida santoku is made from one of our favorite steels, white or Shirogami #1. This steel is even more pure than yellow steel (which is relatively pure). The lower the number, the higher the carbon content, so white #1 has the most carbon and white #3 has the least. The higher carbon (and hardness) leads to white #1 having the best edge retention of the white steels and also the best ability to hold an acute angle.

Nishida-san is a relative newcomer to the Japanese knife scene and has been forging blades for just 12 years. But in this short time he has shown his ability to make knives of high quality and performance.

This 165mm santoku is about average in length for the breed but at 4.4 ounces, it is a bit heavy compared to other knives of this style and size. The core Shirogami alloy is covered in a soft iron cladding with a nice semi-smooth kurouchi finish. The blade is carbon steel so it needs to be kept clean and dry to avoid corrosion.

The oval wa handle is made of wood and it gives the blade a balance point just forward of the pinch grip area. This is a well finished and good looking knife. It would be a good starting place for a home chef wanting to get into Japanese carbon blade cutlery.
