The Nishida Gyoto is made from a core of Shirogami White #1 steel with a soft iron cladding. The outer layer is enhanced with a semi smooth kurouchi finish which transforms into a bead blasted kasumi finish to the edge.

We like white #1 steel for its ease of sharpening and ability to take a very fine razor sharp edge. Not the easiest steel to forge and temper properly, white steel done well is a testimony to a smithís skill. Nishida-san is a young 35-year-old blacksmith who has been forging knives for about 12 years. He lives and works in Kumamoto and his knives are his sole authorship.

The Nishida gyuto is a well-crafted knife which sits on the heavy side of the scales. It has a fairly thick spine which only tapers down toward the tip end. While the grind is very well done the blade still displays a heft to it that will find favor with those who like a Western style feel to their knives. In fact, this is a great place to start if you are coming from a classic Western chef knife but are looking to experience a Japanese geometry and shaped blade.

The steel is very reactive so care must be taken with maintenance and drying between uses. The wood handle features a bolsterless design and is finished with a gloss coating.
